I realize it's still in it's early stages, but I'd be interested in seeing something on the new MVC ASP.NET framework.  I'd like to play with it, but I don't really have the time to do much with it on my own.  Silverlight development would be quite interesting, as well.

Chris will be presenting WPF and Expression Blend in Fayetteville, Silverlight was in Ft. Smith.
